Recipe: Lemon-Blueberry Cheesecake Bars
These look like a great Spring snack! I love cheesecake, so I am wanting to give these a try!
What you will need:
Crust
- 9 graham cracker rectangles
- 2 tablespoons granulated sugar
- 1 teaspoon grated lemon peel
- 1/4 cup butter, melted
Filling
- 2 packages (8 oz each) cream cheese, softened
- 2 eggs
- 2 tablespoons grated lemon peel
- 1/4 cup fresh lemon juice
- 1/2 cup granulated sugar
- 1 1/2 cups fresh blueberries or Cascadian Farm® organic frozen blueberries (thawed) (from 8-oz bag)
Streusel Topping
- 1 cup packed brown sugar
- 3/4 cup Gold Medal™ all-purpose flour
- 6 tablespoons cold unsalted butter
